The third pick in our ethical restaurant roundup is the Emiliano Restaurant in São Paulo. Although still in its infancy, the sustainable food movement is fast picking up pace in São Paulo, Brazil’s culinary capital. And chef of The Emiliano Restaurant, José Barattino, is one of the movement’s pioneers.
José uses seasonal, organic ingredients from small local producers and has also helped set up a network of producers throughout the state to deliver fresh, ethical ingredients to homes and businesses in São Paulo.
‘I wasn’t looking for sustainable food’, José says, ‘I was just looking for good food. We were always looking for better ingredients, so we realized we needed to get closer to the small producers supplying us.’ The result is a contemporary menu comprised of award-winning recipes.
