Like a few of our other restaurants, Eight Restaurant cooks with local produce whenever possible. The only meat served in the restaurant is reared on the hotel’s own farm, for example, and there’s an extensive organic vegetable garden. And if the kitchen needs ingredients that are unavailable on the farm, local suppliers are thoroughly researched in order to obtain the right produce.
The freshness of the food is clear from the menu which changes daily depending on what ingredients are best and available. The website refers to a meal at Eight as a ‘farm-to-table’ eating experience.
