Where world-class food and ethics meet –Blue Hill at Stone Barns
The penultimate pick in our ethical restaurant roundup is Blue Hill in New York. Located just 30 miles north of New York City in the Pocantico Hills, Blue Hill sits within a working farm and educational centre. The surrounding fields and pasture supply all the deliciously fresh produce for the restaurant (and its sister restaurant of the same name located in Greenwich Village).
There are no menus at Blue Hill. Instead, guests are presented with a list of over a hundred ingredients, updated daily, which contains the best offerings from the field and market.
